Never buy condiments from Costco/Aldi if you want a high end experience.

Sometimes Costco has a good kimchi in the chilled section (not same as one pictured by OP). However heaps of variance in kimchi and personal preference.
My family preference is to drain it (keep juice), chop , fry and put in fried rice (stir in juice at last minute)

I get them from Korean groceries. Huge variety in terms of tartness and spice.
yep, depends on the age of the kimchiii
less pungent n crispier = young kimchii
more taste = old kimchi
love the crunch? = radish kimchi…
the last bit of kimchii is best for stew or pancakes.. because of the left over sauces
i just prefer to make my own lol~
Look out for Bibigo (비비고) brand.
They do a variety of different kimchis- cabbage, radish, perilla leaf, etc and for my money are some of the best commercially produced around.
The flavour is well balanced- a little sour, a little funky, just enough spice- and versatile enough to eat fresh as a side or add to cooked dishes.
I like Paldo brand for cooking too.
Both are available from a decent Korean supermarket, couldn't tell your where in Melbourne though.
Costco returns policy is pretty much no questions asked. You're not stuck with it, just take it back and get a refund.
