Just bought this myself from Officeworks with a iPad smart keyboard, pretty nice deal compared to RRP, but not as good as some previous deals.

Is it worth holding off for the 2021? Kinda want it for uni starting soon.
Depends on what you value. It will be faster and likely have a mini LED display.
I personally have a gen2 with no need for anything newer. I don't do anything intensive on my iPad Pro so don't need the speed and the existing screens are 120hz and great.
What are they studying? If its anything creative or requires software (architecture, modelling, etc) then I would wait. Anything else.. get them a gen2 or gen3 as it's sufficient for normal uni activity.
Apple edu is $1479 with free airpods and you can sell it for at least $150 so it will be $1329
Should wait for the next gen iPad Pro coming in March.

Edit: there is also likely a new generation next month (with the crazy power similar to an M1) so I would hold off on buying unless you need it.
