i didn;t realise you could ferment electrically

is that going to speed up the process at all or just ensure a more stable temperature?

can i make souerkraut in this?

It would just warm the container slightly.
You can make sauerkraut with a bucket and a dinner plate.

You just need a bucket with a lid and a heavy dinner plate to hold the cabbage under the water and plenty of salt.
