I no longer want to carry my camera when travelling ( that will happen again )and so am wanting a mobile phone that has great camera and great zoom.
I know there are a few brands that claim this title so I’m confused.
I know I’m going to have to spend much more than $1000 so I want to get this right.
Any help very much appreciated.

As it stands from the list iphone12 pro max is the best bet, e.g. ecosystem and support.
However if you can wait until what the Xiaomi mi 11 Pro, and the Samsung s21 series delivers, i'd wait for that.

I would suggest look at this video first. MKHD has done blind smartphone camera test for two years now. iPhone has been eliminated and never made it out of the first round for 2 years in a row. Most people choose other cameras than iPhones.You'll need a compact camera if you want real zoom, phones have fake zoom. Instead of buying a $1200 phone buy a $200 phone and a $1000 compact.
Huawei still seem to be the king of cameras, with the Mate 40 / Pro /Pro+ & the P40 / Pro / Pro+.
These use a large 1/1.28" sensor, which is quite a bit larger than most manufacturers (Samsung S20 Ultra & Xiaomi Mi 10 Pro / Ultra are in the same ballpark). If you know much about cameras, you'll know sensor size is important for image quality, especially in low light. Most of these models also use a large 1/1.54" sensor for the ultra-wide angle camera. Again, a larger sensor than the competitors, producing great image quality, but it comes at the expense of a field of view that isn't quite as wide. They also mostly have periscope zooms which produce good result, though some competitors are supposed to be a bit better (Xiaomi).
Huawei's budget brand Honor also has used much of this technology, while foregoing some features. It's flagship Honor 30 Pro+ uses the same large 50MP 1/1.28" sensor. But misses out on OIS for the main lense, & uses a much smaller sensor for the ultr-wide camera.
But then you have the lack of Google Mobile Services, which is a very big problem for a very many users. Some people get by fine without it, some are happy with the work arounds.
The Honor brand has also been caught up in the Huawei bans, but has now been sold.
They're due to release a new phone in the next couple of weeks, the Honor V40 Pro. It's slated as having a Mediatek Dimensity 1000+ chip. But they're in talks with Qualcomm for future chips (Huawei is still banned from using Qualcomm & GMS). So it will be interesting to see how much top tech this phone carries over from Huawei, & whether Google Mobile Services will be included.
Not sure, but I'm guessing it may be tough to find this phone in Australia. Plus many people would have a bad taste in their mouth buying a phone linked to Huawei.
