I am looking to buy OnePlus 8T 12GB/256GB UK/EU version (with B28). Can anyone direct me to a reliable seller at a good price. I can only find Chinese version with Global ROM everywhere.

But I heard all OnePlus models (regardless chinese or global or EU versions) after Android 11 have stopped supporting VoLTE and 5G in Australia specially on Telstra. Plz see below forum discussion:

Sounds like you need to just search around for the KB2003 variant until something pops up.
I would be trying the EU/UK versions of big sites like eBay and Amazon
