Hi had $200 travel credit but obviously because of COVID didn’t have the chance to spend it. I read that Amex said they were going to extend the credit but I can’t find any literature on what happens to credit that goes unspent and then renews.

When you renew your AMEX then you get entitled to another travel voucher. IE Both renew.
I agree with ringing them. No 1 with customer service.
Travel credit does not accumulate. You should've received an email from them if your travel credit's expiry date was extended due to COVID.
I msged them on Amex app, apparently my exisiting Credit will be reissued in 8-10weeks (wtf?!!) and then will be Valid until March. I will then have my new voucher to use.
Catch: less than 4 weeks potentially to use exisiting credit after issue. And two credits cannot be stacked on same booking.
It's bad luck that you can't advertise them for sale on Ozb ;o) Maybe book yourself a room somewhere on spec. for a stay within 12 months (Ocean View?) and spoil yourself, or spoil your parents, etc.
Under normal conditions the travel credit does not carry over. But there are special conditions now of course.
I find it’s worth phoning AMEX they will give you good information very quickly. Your question then “renews” is a little hard to follow, what is it that has renewed, the cc?
