Honestly, just buy some Umai Dry bags, go to your local butcher, build a relationship and do some simple dry ageing yourself!
You'll realise pretty quickly it's not worth all the fuss, but definitely good for a special occasion or just to try it out… Seal it, fridge it, forget it, come back in a month and there you go.
I will point out, dry ageing reduces the weight-in by ~15% and spends at least 28 days taking up storage space, so its always going to have a well deserved markup.
