First time cash back app user here. I purchased SurfShark two years deal and tracked about 20% of the cost. For some reason the payment date won't be until next June 2021. Is it normal to have to wait that long?

That seems a long time but not unusual for up to 6 month wait depending on the item and associated cancel/refund conditions.
