I'm after a chair with a high back, head rest, and recline feature. Are there any specific cheap chairs that are generally recommended?

I bought a used steelcase leap for around $100 from scumtree. There are a few sellers on FB marketplace with ex office furniture.
I would focus the search on office chairs rather than gaming specific.
Officeworks has a pretty big range and you can try them instore.
Around $300 would be an ideal price.
Should you always try sitting in the chair first? IKEA isn't really near me but from what it looks like the Markus is by far the best option for around $200.
I agree with try before you buy… spend 200-+ to get something that sucks is really poo… done it before, wont do it again
For me a must is a locking recline position.
Not sure what you consider "cheap", or how far back you consider "reclining", but https://www.ikea.com/au/en/p/markus-office-chair-vissle-dark… the markus is quite a good chair, and seems to suit your needs. It's not fancy and colorful, but it'll beat your other gaming chairs that cost ~400.
