For the month of November (or until dispatch limits are reached) we're offering 11% off everything on the store.

After your order is placed our customer service team will be in touch within 2 business days to confirm the day it will be sent (minimum of 5-7 business days from order). All products are made-to-order and shipped out in polyboxes containing frozen-gel packs which last for up to 56 hours. Orders arrive within 24-48 hours of dispatch. Even from Tasmania to Cairns, and it's still colder than a supermarket deli fridge.

  • Hi, do you sell any sashimi grade salmon?

      Yes! This fillet is Sashimi Grade but must be consumed as sashimi within 5 days from the date the fillet is packed, and must be consumed on the day the pack is opened. Fresh fillets older than 5 days’ post pack date must be fully cooked before they are consumed and provided that the product is still within the stated shelf life it must be consumed within 3 days once the pack is opened.

          You pick your preferred delivery day and our customer service team will organise it to dispatch your order 24-48 hours before. Sydney is usually 24 hours. Buying direct from us means the fillet will have been packed as recently as possible before dispatching.

          • @NHK42: One thing I noticed is the fillet does not have a packed date just expiry. Is the salmon packed the day it is shipped?

          No question is stupid, Gleung! It helps me make changes to the site for clarity.

          Portions are 100g or so portions (either two or four packs) that come in sealed trays (just like you get in the supermarket). The fillets come in 1kg or 1.5kg come in vacuumed sealed sleeves. They’re cut from the same product, just prepared differently. We recommend the fillet as sashimi as it has been handled less and takes less time to prepare so it gets to the consumer as fresh as can be.

          • @NHK42: Thank you @NHK42. Was worried that 1 kg fillet is a bit too much for sashimi (to be consumed all the same day) for a family of three. Nevertheless shall order a Iso-in-style-pack to check it out. I believe the other products would have a much "longer" shelf life?!

              @Gleung: @Gleung No problem. Yes smoked products last much longer as they are technically cooked. Any part of the fillet can be kept in the fridge or freezer before cooking and consuming later on.

        If I eat it fully cooked, can I open the pack, cut fillet and keep in freezer as separate bags, consume over one month?

        • Absolutely! That’s what I do. :)

          I do this and freeze it for 3 to 6 months. Works well.

            From working with Huon, I've discovered that it's quite a common misconception people have that you can't freeze Salmon. A lot of people are afraid to purchase it over other 'easier' proteins, such as chicken, as they consider it a ticking time bomb once they take it out of the store.

            My dad is pushing 80 now, he still goes out fishing in the river on his little punt chasing sea-run trout, bream and salmon. He's already got Christmas day lunch sorted without having to go through me, it's in the freezer right now!

      Your order confirmation email should have come through as soon as you made the order. The coupon would have been in the second or third line down from the top of the email. If you can’t find it or if it’s gone missing quote me your order number and I’ll send it through again for you.

    What are the difference between Premium Salmon Caviar and Reserve Selection Hand Milked Salmon Caviar?

    • Hi Buffet Squirrel, my apologies for the late reply.

      The Reserve Selection will have been matured for longer, with a fuller pearl size than our Premium, allowing the membrane to take on a more robust natural sea salt flavour.

          Approx. 17 days for caviar, just ensure it's kept well refrigerated. It's hard to say with frozen caviar. I'm sure you could freeze it and it would taste the same, but I doubt that 'pop' will be there as the structure of the membrane may be affected. It depends on how you plan on serving it and what you're preferences are.

  • Silly question - I noticed on the website the description for the 1kg whole fillet says "skin and scales on". Does this mean it needs to be "de-scaled" before cooking? Thanks.

      No question is silly! It helps me a lot!

      Depending how you cook it, the scales dissolve down quite a lot naturally in the cooking process or crisp up nicely if pan frying. If you don’t want to eat the skin, you can just peel it off after cooking. I find it easier that way. :)

      Our portions come in skin on and skin off variants.
