Wife Wants a Wok

What is the best wok? We have gas, I don't care how much it costs. I tasted food she cooked at her parents in a wok and realise they are the superior cooking device.

    been watching too many uncle roger vids haven’t you? whatever you do, don’t drain the rice!

    also don’t get the cheap ones, they tend to rust.

    get a good quality traditional Chinese wok, which are hand hammered wok. When they are seasoned well, they are practically non stick.

    Go to an Asian store and buy a wok, none of those non stick fancy schmancy crap you'll find at Myers, kitchen Warehouse and stuff

      This. Go to an Asian grocer and get a carbon steel wok for $15.

      Most important step is seasoning. A brand new wok will be bare steel and will rust. Seasoning will turn it black and develop a thick rust-proof barrier.

      And never wash with dish soap - hot water with a stiff brush only.

      Always dry immediately over the highest burner setting on your stove.

      It'll take years to develop that 'breath of the wok' taste.

    Why don't you get her to ask her parents what wok to buy for your kitchen. Unless it was a family heirloom that was hand forged by the first emperor of China, then I think they might be able to help.

    I have my eye on Yoshikawa Wok in Costco, if not mistaken around $120. If something wrong you can always just return it.

    • For me it's too small. 40 cm is a great size for a grown family

      I prefer Wok Swap myself, I loved the episode where they placed a Chinese Wok in and Indonesian household and the family just made Nasi Goreng in it anyway no F's given.

    Don’t be disappointed when the food she cooks in the new wok tastes less superior. The seasoning is ingrained in her parents wok. It will take a few rounds using the new wok before the food gets superior.

  • It's not just the wok but you need a hot enough stove top to get the right "wok hei".

    Do not get one with the two small handles on each side. They will get super hot and impossible to hold. Get one with a long handle on one side and a small on the other.

    Half price high quality full stainless steel could be a good option. At any of the 'half price always/often' kitchen stores.

    Stay away from non-stick.
