I'm planning to get a phone with eSIM. If I was to put in another SIM, does that mean I'll have two numbers? Does that mean I can use data from either of the SIMs? How do I "control/switch" it? Thanks!

With both an eSim and nano-SIM in the phone, then yes you would have two services/numbers. As to whether you have both voice and data on each service depends on your plan with the each provider of course.

One number at a time can use mobile data. To change which number uses mobile data, follow these steps:
- Go to Settings.
- Tap either Cellular or Mobile Data.
- Tap Mobile Data.
- Tap the number that you want to be using mobile data.
If you turn on Allow Mobile Data Switching, then while you're on a voice call on your voice-only number, that number automatically switches to use voice and data.* This lets you use both voice and data while on the call.

Been doing that for years and it's really easy to set up.
The 'phone tells you who is calling on what SIM, lets you nominate a SIM for each contact, etc.
How it behaviour also depends if your phone is Dual Sim Active or Dual Sim Standby. For example you normally have Telstra SIM for voice and Kogan SIM for data.
Dual Sim Standby - when you're on a call over Telstra, your phone will have no internet access during the call. Similarly if you are sending or receiving MMS on Telstra, you lose internet temporarily when your phone "switch" over to the other network and back. I used a Nokia dual Sim before and that's the behaviour.
Dual SIM Active - you can surf the net on the Kogan SIM regardless whether you are on call over Telstra SIM or send/receive MMS on Telstra SIM.
