ELI5: BBQ Grill Something Vs Kitchen Cooking

As a non-food person this is a genuine question, but too stupid for me to find any answers on Google lol.

When just cooking a single meal, not entertaining and all that, what would be the reasons to cook say a steak or a pork chop over a BBQ which in in my case has all the overheads like firing up charcoal, vs just cooking it on a griddle plate on the stovetop in the kitchen like a normal meal cook?

I don't have any fancy bbq with a lid to capture smokey flavours and what not either. I'm not claiming they are the same, I just realised I've got this pork steak out of the fridge that I had planned to bbq grill "just because …" and realised I couldn't answer the question, then my OzB sense of value for time and money kicked in. What do I get grilling the meat (and some veg) with the effort of setting up the BBQ vs just in the kitchen?

    If you are searing meat/vegetables, outside means less lingering smoke/smell compared to inside even if using range hood/extractor fan. Maybe I sear at too high a temp. ¯_(ツ)_/¯

    Well for one you don't need to worry about setting off the smoke alarm :)

    For me it's mostly flavour, if you're not a foodie that might not be a big concern but food cooked over charcoal tastes better than food cooked in the oven IMO.

    Cooking on charcoal tastes definitely different compared to flat top or pan.

    For convenience sake if your cooking for 1 might not be worth firing up the outside charcoal BBQ for a pork steak n vegies.

    That being said there is a certain charm to cooking/bbq'ing over charcoals.

    What do I get grilling the meat (and some veg) with the effort of setting up the BBQ vs just in the kitchen?

    U don't need to be a "foodie" to appreciate other cooking methods :-P

    Anyways charcoal cooking: is versatile (grill, smoke, sear, bake and more), has higher heat (infrared and indirect) and it adds to the flavour of the meats etc etc.

    • Just have to start getting the BBQ ready 2 hours before you're ready to eat 😕

    It is mainly technique, heat, flavour and the cultural ritual that’s involved with BBQ. If you not into any of that, why not just microwave something frozen?
