Got this plan last month with $60 cash back so far so good. Optus network seems fine but I live in a metro area so that’s standard. I hope it will work fine when I will be travelling around after covid

Agree. Their 6 month plan has it though. The 12 month plan doesnt. Also, amaysim doesn't respond to competition (like Boost, Catch Connect, etc.)

How is Amaysim's connection? Internet and call? and drop outs?
I've been looking at the $5 for 2gb deal, just to test out the network.
It's on the Optus 4G+ Network. Not the best, but quite great at the price point you are looking for. Amaysim, although being a MVNO, has great customer service.
Network and Coverage largely depends on the area you live, and spend most of your time (work/activities/etc.), hence it wouldn't be fair to rate Amaysim's network without knowing where you intend to use it. Generally, Telstra's (Boost Mobile) coverage is much better but again, I don't want to generalize. I think, for $5 2GB deal you may test out the network once.
Don't forget to sign up thru the referral link though. It would earn you an extra $10 in Main Credit, enough to cover another 28 days, (as ongoing for the 2GB Unlimited Plan is $10). So you would get 28 days + 28 days with an actual cost of $5 to you.
