I am on a hunt for a better milk for my cappuccino. I am using the Coles or Zymil light lactose-free milk which is alright, I guess, but I want more of that velvety, smooth and homogenous froth. A milk that "stretches" better. I am using the presure steam spout from my Breville coffee machine which makes the froth OK, but there's a lot of watery milk at the end of the pour. Doesn't have to be lactose free. Light is fine. What am I missing? Note: I am not a barista. Any suggestions would be appreciative, thanks :)

Just like everyone has a favourite coffee, everyone will have a favourite milk.
Everytime I did my grocery shopping I would make it a point to try a different milk until I found my current favourite. Unfortunately it's not readily available in Coles/Woolies near me. I buy it weekly from my local coffee shop.
Maybe start with milk that your favourite cafe uses?
After looking for a 'favourite light milk' unsuccessfully, my current favourite is a full cream milk. Oops.

This. Even try a third or half lactose free full cream milk mixed with your light milk and you'll notice more froth, if you still want to have it primarily low-fat.
Even though different machines froth differently, U may find different results with taste and consistency. Hopefully some of these will help U out. Worked as a Barista on Collins Street in Melbourne a few years back.
You can find most of these in your local Coles/Woolies and most general grocery stores.
Milklab make a lactose free basita milk and soy. Also Milklab Almond milk works very well, does not split when frothing milk.
If soy milk is your thing then Bonsoy or Vitasoy Cafe barista work well when frothing. Does not split.
For light or full cream milk: Complete Dairy froths well. Also use Pura.
Milklab Milk are very good. The dairy milk stretches well and doesn't taste like UHT or anything.
Happy to try it, although there was a recent recall for the Milk Lab Almond Milk because of microbial contamination fears, so, I am sceptical about it. I don't think I've seen it at the local supermarkets, though (Highett, VIC)
Is there actually a difference in milk or is it all just placebo? Like they all come from the same cows at the end of the day right?
Some texture better than others. Compare it to say Coles Brand VS say a more expensive milk like A2, it is purely personal preference to what people prefer n like, its taste and their usage, in this case frothing milk for coffee and hot beverages. Some prefer different brands and thats all good.
However, say you try long life milk VS fresh milk, there is a night and day difference in terms of texture and quality of taste for in this case milk based coffees and hot beverages.
For years I would only drink milk from a carton as plastic bottle milk had a distinct taste I ended up associating with plastic. Later I moved to plastic milk but found it tastes different throughout the year and switched to long life where it's consistently the same.
Or maybe I'm just weird.
Light milk is just water lying about being milk.

Full cream milk for coffee, light milk for everything else (cereal etc).
Norco capo is what most people I know swear by.
