Just keep trying your local shops. Stocks are very low, especially in lower price ranges.
Second hand stuff is also commanding a premium and selling quickly due to shortages.
Bigw had some decent Diamondbacks and others. Pretty cheap too. My db was 340 a few weeks ago, but, yes bikes are selling fast everywhere.
Please dont ruin cycling for yourself by buying bike from department store. They are heavy and have lowest of low components.
Try Reid or bicyclesonline.com.au.
Or Merida or Giant.If these are still too expensive, check fb market or gumtree. But 2nd hand isnt the best option if you dont know what to look for when buying one.
Alright, a friend of mine also recommended Reid, never heard of them till now but will definitely check it out.
Will you actually be Mountain biking?

Sydney has heaps of MTB options. But either way if you are not actually going MTB riding than really any outlet style shop will get you the type of bike you need. But it won't suit you if you start MTB riding.
