Well, maybe… but if they can be Skypped via a non-phone number (ie, for Free), you're good.
If Not, consider a BOOST pre-pay card, of enough cost (eg, per year) to include UNLIMITED call + texts to ~25 countries, ie, if your country is in ther list of 25. If not, there may be more costly BOOST pre-paid plans that have more countries.
If you use Boost for mobile, you can get free (included in most packages) unlimited IDD calls to US & UK. There are some other mobile operators who provide similar unlimited calls I presume.

Thanks but I need to record the conversations so it has to be something that can run through a softphone on my PC, so mobile plans and messenging apps won't help.
You can record Zoom calls (at least on PC)

Don't know. If someone wants to watch me get blind drunk with Random Japanese people, they are more than welcome to.
Not sure in about Apple phones, but on Android there are many apps available that can record mobile calls. I use ACR myself. Was slightly crippled last year when they weren't allowed to use the caller ID feature, but it still works well.
Maybe one of the Betamax resellers, e. g. poivy.com. They can be setup on softphone.
VoIP is dead.
Use one of the many internet messaging platforms.
