I'm not really into gaming but am looking for a desktop to do some video /photo editing and that's pretty snappy and future proof…I also use some charting software. I don't want to spend more than $1000-1200 max. Would any of the current Techfast ones be suitable, or perhaps a Dell with 20% off on Ebay? Advice needed please! Thanks in advance.

Just go with a Samsung 1TB 860 EVO, it's around $160 after cashback from the deals around here (from memory).
a case with USB-c
Hard to find a case with USB-C, I don't think the motherboard even has a USB-C header. Something like the NZXT H510 should be good for your budget, around $140-$150.

For your use case, CPU cores is the most important. I'd also suggest going with an Nvidia card over AMD because CUDA is generally more well-supported than OpenCL for video editing (e.g. Premiere Pro) at the moment.
