The mobile number itself is good to me. However I'm not using it at the moment and on a plan without lock-in contract. I'd like to keep this number but to cancel my plan. So if I've done that, say after 1 year, I decide that I want to use it again with a new provider. Is it OK? Thanks in advance.

You need to find the cheapest SIM for a year ( I think Amaysim do one for ten bucks ) and port the number over to it for "storage".

No. But you never "owned" the number anyway. You only have an exclusive right to use it for a period of time (I am not sure of the exact legal terminology).
Anyway, this is all you need to know:
transfer to a $5 aldimobile sim, good for a year, then transfer elsewhere or recharge $15.
As mentioned above, port your number to an Aldi "pay as you go" plan, then cancel your old plan. The starter kit costs $5 in store or online and comes with $5 credit that lasts one year, even if you use all the credit. Best to turn off data.

If you cancel your plan without porting the number it goes into a pool for anyone to get when they get a new sim card.
