I'm looking to pick up a couple of LEGO sets that will give me a decent variety of pieces. Not looking for any particular themes etc, just looking for piece count & variety of pieces.
Any suggestions?

I've been very impressed with: LEGO Creator Dune Buggy - 31087.
Agree. Its a great set.
i suggest bulk buying off facebook/ebay/gumtree.. after you get it, run it through the dishwasher or washing machine (in those delicate bag things)

You can calm down about the washing the cardboard if you were extremely unlucky to have it on it it won't remain for more than 24 hrs .
I'd buy for building the seemingly subsidized smaller sets that are often on special for around $15-$18 and you get around 1/3 KG of LEGO .

Lego Creator (3 in 1) is way to go for variety and versatility for free build.
Though for piece count, you may consider the classic theme with bulk pieces included.
I wish they sold a bulk set that had a mix of every single piece that currently produce. Something with 3000-5000 pieces.
One of every piece is pretty pointless though, what could you build?
If you're planning to do this with your kids then you can't go wrong with a large creative brick box, will give you loads of basic pieces to start playing.

On top of that get a couple base boards and a few small sets with extra wheels - you always need more wheels.
I like the current classics windows of creativity and bricks on a roll sets.
They have some good pieces for free play. Could also get a bigger set called bricks and animals and still have enough for bricks and houses or a couple of base boards.
This would give you a great free play set with a lot of things to make.
Budget?
