My understanding is if you aim to be clean and try to sterilise key utensils with hot water, the lactobacillus outnumbers and inhibits any harmful bacteria.

If the lactobacilli have not done well then the yoghurt won't set and therefore isn't a good batch.

When I was making tons of yoghurt because it was all my son would eat as a toddler, you could use a few spoons of good yoghurt like Vaalia as your starter culture, or else a few spoons of the easiyo powder in milk/milk powder. That way 1 sachet could be rationed for many kilos of yoghurt.

      • That's good to know!
Having never made it before, does that mean you use 1L of milk (or 1L using powdered milk), add a few spoonfuls and then just follow the normal setting process?

You can uses fresh milk, powdered milk or long life milk. If you use fresh milk you'll get a much better result if you heat it to near boiling for 30 minutes (I heat mine then leave it with the lid on) then cool it to room temperature.

I use fresh milk with a few tablespoons of powdered milk for extra richness. You can use as little as a pinch of starter(I've used about as much as a match head sized pinch). One packet lasted me a year at one stage, but it does go stale eventually so I use a bit more nowdays.

I haven't made it for a while, but I basically used milk powder in the correct concentration for making milk up to 1L but added a bit of extra powder. The extra protein makes the yoghurt thicker. Milk powder means you can use warm water to get the process started.

Small amount of the starter into the mixture. Then prepare the easiyo thermos as usual. I do worry though about it getting too hot and killing the lactobacillus.

If you want to really penny pinch, you can use some of the just prepared yoghurt, as the starter for your next batch of yoghurt. But with each batch I think the other bacteria increase and it gets less thick each time.

The yoghurt I got was quite thick but if you stirred it too much it would become thin again. It doesn't have the thickerners of store-bought yoghurt.

        • 1+ for the store bought yogurt and milk powder instead of the Easiyo sachets. Youtube link below explains it. Put store bought yogurt into ice trays for convenient rapid use.
Milk powder varies a lot in cost but we get the Coles brand full cream stuff (1/2 price of Devondale, made in same factory i believe).
The sachets are 13.8% sugar (based on strawberry flavour). When you DIY it is a natural yogurt flavour buy you could add sweet stuff after it is set if you want. We stir in preserved fruit.

thanks :) took 3 attempts to get it to work but finally worked but if you use this you loose the extra 5% for 10 or more

  • The Colesworth specials are normally 2 for $7 - so if you're doomsday or Covid 19 prepping then stock up. In all our years (15+) of Easiyo making, had no input or output issues of the human kind.

  • Good god this stuff is amazing. The banana and berry ones were my favorite. It would always take forever to solidify so I would stick it in the freezer. I never thought of it as yogurt but more like ice cream.

  • Thank you. Ordered 4 for $9.35. That's a decent discount. I keep it in the freezer and use 2 tablespoons per kg of yogurt.
