Has anyone done this successfully and what is the best variety to use? I've had mixed feedback but would like to hear from someone who has actually done it!

Be careful, some Bamboo types are and grow like a weed, send out shoots etc. Ensure you get a variant that is not weed and stats where its planted. Or pot it.

we had bamboo back in old house
great for privacy and nose but unless potted they shot out everywhere, crazy root and bamboo popped up everywhere lolobly one way out and to stop them

Stick with lucky bamboo. You might get rucky.

Lilly pilly is better for privacy.
Bamboo is quick growing but leaves a lot of mess.
Bamboo is a grass. Get real.
