These would mostly be used on DSLRs I bet, where anything over this size would be dangerous to store at one time (imagine losing 5 wedding photography shoots)
Most pro cameras have 2 sd card slots that write to them simultaneously.
It's more commonly used as a live duplication backup rather than splitting to smaller cards.
Why risk losing anything when you could simply have a duplicate right off the bat.

Used this on my A73 on a recent 2-week trip to Vietnam. Prior was the UHS-I.. you can definitely tell the difference (buffer) and had 5GB left at the end of the trip.
