Either the Bose or Sony. Best to go to jb-hifi and try them yourself and decide.
Sony or Bose. Tried both and personally like the Sony's, have two of them. Best to try them both in store

If you compare the Bose 700 with the Sony 1000xm3 I think the general consensus is;
Audio quality - Sony > Bose
Comfort - Bose > Sony
NC - Bose = Sony
If you decided on Bose get the 700 instead of the QC35II since you have $600 to play with.
seconded, i personally went with the Sony's and the comfort does get better as the cups soften. Bose cups are comfortable out of the box and don't need a bed in period.
I love the new Bose 700 n/c - they felt amazing on my ears.
I also have the Sony XB900N which look mean and the bass is good - but disliked the fit on my ear.
I guess you need to work our which is more comfortable for your fit; to me that's the most important feature because if you end up using it a few hours each day, it can take its toll.
I've had the Sony for a while now, find them very comfortable. Sound quality is great.
I would have went with Bose if their battery life was as good, the downfall of Sony is no multiple connectivity.
