I am just wondering if anyone has any experience using Apple Pay with Qantas American Express Discovery Card to bypass the American Express surcharge most places ask for? Thanks!

Just shop at places that don't charge a surcharge? Get a better rewards card that isn't Amex :)
The Card that you have just described, while having $0 annual fees, when you make large purchases in store, you will still be charge the high AMEX fees, thus negating the benefit of a no annual fee AMEX. I recommend you change to the Qantas Premier Everyday, having a slightly higher annual fee, with similar points potential. This means that in the places you would actually use your Credit Card, there are lower/no fees.
Only downside is no Apple Pay :(Thanks all. that makes sense. i was actually hoping to use it as a no annual fee rewards card. currently with hsbc with the annual fee refund but they are terrible to deal with.

Apple Pay won't help you, it is still Amex.
