Fine Shredded Carrots - What to Use?

Hi guys

I do a bit of catering on the side and slowly getting a bit of traction. We use a lot of carrot in our dishes. I'm looking to get those finely grated/shredded carrots. Without the use of a manual julienne peeler or mandolin.

Any one know of any vegetable prep machine with a small footprint and produces good lookin' thin shredded/julienne carrots?

    Not sure about footprint but a robocoupe is industry standard. Lots of attachments. Myself I just use the mandolin with julienne attachment. When you factor in the price, time so set up, time to clean, time to pack down and size/weight no julienne slicer alone is really worth the effort/time/cost vs a mandolin. Save very little in the end honestly.

    • Agreed. I looked into the robocoupe, but damnnn. Totally not worth it. Esp since we've only got a small operation.

      Looks like I'll be getting a mandolin instead. Any suggestion as to which mandolin to get?

      • I can't remember the brand but its a full stainless steel one with different attachments. Has hinged legs to make it stand. Very sturdy. I'm house sitting at the moment will check when I'm back in the boat in a few days sorry.

    part of my apprenticeship was making julienne each day 20 lt bucket carrot, 20 lt bucket leeks, 20 ltr bucket red capsicum

    by knife each day. mandolins are great.

        have been out of the kitchen for 10 years now so wouldn't be able to recommend a brand sorry.

        in all perfect honestly i'd go with a decent name, especially depending on the quantity you'll need and also the fact that you'll probably use it nearly everyday.
        You will need to get a stainless steel one<<<<<——————-you want it to last
        Don't look at it as an expense but rather as an investment in time saving.

        I've used different ones over the years where restaurant owners would buy them to save us time. those plastic ones will only last a few months, seriously get a stainless steel one it will last years,

        yeah the restaurant was crazy busy 300-400 on a monday night quietest night of the week lol
