Looking for good apartment inspection specialist in Sydney whom would help me to discover any defects in a new apartment (mostly interior). Any recommended companies? This is for the pre-settlement inspection.

Find their previous projects and go and inspect them. Door-knock owners to ask if there have been any issues.
Do desk research into the builder's/developer's previous projects – look at the strata report, paying attention to the sinking fund forecast and any remedial works that are planned or completed."

If the developer has not been around for at least 10 years, run. It's one of those phoenixing companies to avoid liabilities down the line ie structural issues.
Edit: builder too.
Long term problems and costs are external.
If you've exchanged contracts and are past the cooling off period then just visually see if anything's different to before you exchanged. Also turn on all light switches and taps, flush toilets, plug something into power points and check them yourself and open and close doors and windows.
Apartments are much simpler than houses.
I doubt they'll find anything (that the seller accepts to remediate) that justifies their fee.
