I'd say Daylesford too, but go midweek. Weekends are bonkers busy. You'll have a much more relaxed time without the masses of a weekend.

Head to the beach. Find an airbnb with a fireplace. Somewhere relativrly empty at this time of the year. E.g. venus bay
This is what my Mrs likes to do. We are in WA so we go to Dunsborough or Eagle Bay near Margret River so we can do the wineries & breweries during the day.
Venus Bay, another lovely and memorable place. One time I saw lots of tiny pink crabs there on the beach. But I just don't seem to be able to see them again. They must only appear at a particular time of the year. If anyone knows when they would appear, please share. Thanks.
Balgownie Estate Vineyard Resort & Spa ? We recently spent a weekend there and loved it! The missus paid for everything, so not sure how much it cost but on their website it says you can get 30% off if you book at least 30 days in advance.
Great area in the middle of Yarra Valley. So many wineries. Historic house/heritage-protected trees nearby at Chateau Yering.
Pretty good onsite restaurant too. Entertainment Book used to have a deal for the restaurant - Rae's Restaurant. Not sure about this year's book. Nice atmosphere, cozy especially in winter with the fire burning. Even without the deal, prices are reasonable - Dinner 2-courses $60, 3-courses $74.
I was whisked away for a romantic getaway* by the missus. My amazing MIL looked after the kids for us. They had a blast and didn't miss us one bit.
*Disclaimer: The missus wanted to use a spa voucher she'd won and I got dragged along. Once you get over the whole stranger giving you a massage while your naked wife is next to you thing… it's actually quite relaxing and enjoyable.
Disclaimer 2: The geisha bath experience does not include an actual geisha. You need to provide your own.
Disclaimer 3: Spa thing was half-day. Rest of the weekend we did whatever I wanted๐
It's very easy to get used to being pampered and the glow-up was real. Everyone commented on how much younger and more relaxed I looked when I went back to work on the Monday.
Ps:I highly recommend leaving the kids behind.

Balgownie is great. Piaf day spa up that way is also good. Throw in some hot air ballooning (Global ballooning meet at Balgownie so use them… they have accomodation deals) Book a fair bit ahead, and cross your fingers on the weather.
Or head down the peninsula to the Hot Springs.
Or a stay at Crown etc if you want to stay in the cbd.

Best place I have stayed for something like this is Lindenderry at Red Hill.
Lots to see and do in the area, but unspeakably luxurious if you want to stay in.

Without a doubt, I'd say a spa. Daylesford? Or even a lightning trip to Tassie.
