thanks for the post - my only question is OP - if you are not sure if it is a good knife… why post the deal?

      Idk man

  • I have a couple of their knives and they are absolutely amazing

    • Better than Global knives?

      • +1

        IMHO, definitely better

        • I think one of the hardest thing is that, you have to see in person to like it. I got a Miyabi 10 inch, I don't even like the handle…

  • Good quality knives like this are a one time investment if cared for. Unless you have friends like mine who break them for a laugh when drunk.

      Not friends

  • How does this compare with Valarian steel or dragon glass?

    • see the knife ? they Die Messier …lol

    • Well Dragon glass would be brittle and a one time battle item so not good prolonged use.
Valerian steel would be the best but since the scarcity of the metal it would be too expensive.
This would be your mid range item

For a santoku in that price range, I'd be looking at one of these two myself. https://japanesechefsknife.com/collections/santoku/products/…

Note they are both made from high carbon steel and can rust if not cared for correctly. That's the trade off for having knives which can sharpened to a true razor sharp edge

    • For Misono, I have seen many Japanese Chefs using them, I am not very good at shaprening the knife, so I probably pass on Misono.

    • Totally agree on the carbon knife sentiments.
These look good, what method of sharpening do you utilise?
