Will be traveling through South America this winter (Peru, Chile, Ecuador). Any leads on where/how to purchase a SIM card (with data) that would cover these countries?

Ecuador is the difficult one. You can get a global SIM which covers all those countries but it costs more and gives you less for your dollar.
If you want to optimise you can buy a Simcorner SIM for Chile and Peru. Ecuador you will need to prep your broken Spanish and buy a local Movistar tourist SIM.
Message these users for specific Chilean, and Peruvian, knowledge :)
