This. What I consider would create a sauna for me will not be enough to keep my wife warm at all.
How much warmth justifies this?
Gsm means gram per square metre. It's not necessarily a good indication of warmth. If you want to know how warm, you need the tog rating which measures the thermal resistance. Ask the manufacturer if this info is not available on their website.
500gsm is pretty standard for a wool quilt. It's what I use in winter and have a lighter weight one for summer.
Pure Zone will be overpriced for a comparable quilt. You could get a similar quilt for much less. Like this for example from Harris Scarfe:
