Setting up a Wi-Fi Hotspot for a Small Event

Hello All.
This question is a little out there - but I know there are some clever people on this site.
I am thinking about setting up a little event to help people research their family history/genealogy.
Would like to have about a dozen laptops in a couple different rooms - each connected to wifi. The event would run over maybe four hours.
I think this would overload the wifi in the building - so was wondering about using a mobile hotspot.

I wondered if getting one of these in each room would work, whether it would enable reasonably fast browsing, and how many GB you think I would need.

    Are the WAPs in the building old or are they home grade WAPs? A half decent business grade WAP will easily handle 2 dozens clients for a few hours of web and photo browsing with ease. If the clients start streaming videos simultaneously then you will run into airtime utilisation and Internet bandwidth problems.
