I’m going travelling in a caravan for a few months and wondering the best way to access WI FI for my IPad and laptop

you might want one that supports external antenna, it can make the difference….google "4g external modem antenna". They have whip,yagi and a whole bunch of others.
If it is just for a few months, maybe get a 4g pocket wifi and stock up on some starter sims and change them as you run out of data? eg. https://catchconnect.com.au/products/mobile/90-day-plan/3
If you got enough data on your phone, see if it can hotspot. 2 devices aren't too much for an average phone to handle. Just make sure you have a charger or power bank handy, it'll use up your battery pretty quickly.

off peak. No contract.As much as I dislike them probably Telstra would be your best bet. I know they have the best coverage in the NT. You might be better looking at 12 month options for your credit- if you go prepaid. Then if you travel to areas that don't have any coverage you wont loose your credit.
