I love cooking! Anyway I want you guys to share some of your favourite recipes, and some of your lazy recipes with everyone, and in return here are a couple of my favourites :)

My favourite go to/lazy recipe:
Spaghetti
Grate a carrot and a zucchini, fry up with garlic
Add a can of lentils OR 250g of mince meat OR a can of chickpeas
Add a jar of whatever sauce is on special
Simmer

Serve with pasta

My current obsession:
Nasi Goreng and Sambal Eggs
(this is a Dutch version of the Asian, so it might sound a little weird to some!)
Sambal Eggs:
Ingredients
2 Beef stock cubes
Can of coconut milk
1 Tbspn lime/lemon juice or vinegar
2 Tbspn sugar (I like brown sugar)
1 or 2 brown onions
3 cloves of garlic
1 or 2 Tbspn Sambal Oelek paste
1 or 2 Tbspn curry powder (I like clive of india)
Hard boiled eggs - however many you want

Method
Chop and fry onions and garlic. Add sugar. Add sambal oelek, curry powder, crumbled stock cubes, lime/lemon/vinegar and stir fry. Add can of coconut milk and allow to simmer for 5-10 minutes.
If you want you can freeze the mix at this point, or freeze some for later and serve the rest with eggs, or serve some with eggs and serve the rest the next day… yum

Nasi Goreng:
Ingredients
1 1/2 C rice (prepared)
1/4 - 1/2 Cabbage, shredded
2 or so eggs
Soy Sauce
Sambal redak paste
2 Tbspn curry powder
1 or 2 onions, chopped
2 cloves garlic
500g or more/less chicken breast/thigh/whole chicken

Method
Fry garlic and onion
Add chopped up chicken
Add curry powder and paste after chicken is browned
Take out of pan, scramble and fry eggs then take eggs out. Add chicken and cabbage and stir fry, then add rice and soy sauce along with the eggs and fry up

    And a quick but great creamy butter chicken which I always enjoy more than any I've ever bought:

    175g butter
    1 1/2 medium brown onion, finely chopped
    3 cloves garlic, crushed
    600g canned tomato puree
    600-800ml cream
    2 teaspoons salt
    1.4 teaspoons cayenne pepper
    1.4 teaspoons garam masala
    1 kg chicken breasts, cut into 3cm pieces
    3 tablespoons vegetable oil
    3 tablespoons tandoori masala or a Curry Paste.

    1. Preheat oven to 180C.
    2. Melt a 1/4 of the butter in a large frying pan over medium heat. Cook onion and garlic, stirring for 15 minutes or until the onion caramelises.
    3. Meanwhile melt the remaining butter in a large saucepan over medium-high heat. Add the tomato puree, cream, salt, cayenne pepper, and garam masala. Bring to the boil then reduce heat to medium-low. Cover and simmer for 30 minutes, stirring occasionally. Stir in caramelised onions.
    4. While the sauce is simmering, toss chicken with oil until coated, then season with tandoori masala and spread out on a baking tray.
    5. Bake chicken for 15 minutes or until just cooked through. Add chicken to the sauce and simmer for 10 minutes before serving with boiled white rice and, preferably, nan bread.

      Yeah I always find the jars of butter chicken just don't taste right, I'll have to give this a try though :D
