These may well be the scraps they didn’t sell the previous day. The mayo may well be used to cover the dryness of the chicken.

But I still love ‘em.

  I nearly spewed in a Red Rooster restaurant once eating a rooster roll. They are always full of grey gristly chicken. I've never eaten one since. I prefer the flayva.

    If they made properly they are nice.
    
    Unfortunately their managers are useless and quality suffers.
    
    It's a shitty job that doesn't pay well.
