I have a 15hr stop over in Seoul, South Korea, and was wondering if anybody has any suggestions for cool things to do and see?
I arrive at 5am and leave at 8pm.

I suggest Bukcheon and Gyeongbok Palace as they are close to each other. But in terms of palace, I prefer Changdeok Palace. More variety of building style.
Namsan Tower has good view too :)
Seoul is an amazing city, could easily spend a day just walking around the city centre exploring.
When are you going - be aware it is really cold in winter!

It's very cold at that time, make sure you have lots of heat tech undergarments and jackets and ear muffs and gloves
Please note:
Incheon airport is NOT in Seoul, it is in Incheon (a completely different city), it takes ~90mins by car/taxi/bus/subway or ~45min by AREX Express train to the city.
You could possibly do the DMZ tour, but that would pretty much take the majority of the your time.
If you do want to go into the city, I would suggest Gwanghwamun (public square ??), Gyeongbok Palace, Insadong, Myeongdong (to shop for cosmetics), Namdaemun (outdoor market) & Namsan tower - they are all reasonably close (walking distance) to each other. You could take the subway to travel between them, but honestly it would be quicker to walk - they really are not that far from each other.
Changdeok palace is nice too (it wasn't destroyed by the Japanese the way that Gyeongbok Palace was), but it is by guided tour only at scheduled times; if you get there late (even by minutes) you'll have to wait until the next tour in your language.
Because people actually live in Bukcheon (area of traditional houses), I've recently heard that the residents want entrance to the area to be by tour only - whether this has taken affect yet I cannot say.

I am happy to take the train into town though as I will be arriving at 5:30am and check out the places you recommend.

Soju could be dangerous. I've missed flights from Singapore due to too many beers at Clarke Quay before departure!

Try Myeongdong lots of Korean foods and close to Namsan tower
Depends on the day of your visit for some of these things, but I would recommend the various markets, and if you like this sort of stuff, visit Gyeongbok Palace.
