Need Help with Buying a Budget Japanese Knife

Having Purchased a Global Minosharp, I've gotten a few kiwi knives sharp enough to use, however they can't slice paper consistently

Assuming this is because they aren't a Japanese Style knife as the minosharp is made for, ( maybe its that i bought the 2 stage Version and not 3 stage )

Decided in purchasing a Japanese Knife to use at home, I have seen Victorinox's Fibrox knives and they are very budget friendly however i'm interested in buying a Japanese style knife. although if i weren't the Fibrox is what i would buy.

I have a budget of $100 - 130 , if you can leave your recommendations down below would be very appreciated.

Currently Looking at Shun Kanso Chef Knife, Any Ozbargainer have experience with this knife or Shun in general?

Another One is the Shun shun benifuji which seems to be cheaper than the Kanso.

Love the Look of Japanese Knives, Besides from being a present for myself will also be a present for Mum.

  • What's the finest water/whetstone you've sharpened to?

    • Im not using a general whetstone so to speak , Using a Global Minosharp, its a Pull through ceramic Sharpener. Ive Used Both the Coarse and Medium Stage.

  • Cutting paper is all about the edge. If you are you using a pull through sharpener, buying a more expensive knife won't do much better.

    I've got kiwi knives that easily slice newspaper. It's all about the angle.

    • Which is Why i'm interested in buying a Japanese Knife, The Kiwi Knives do not match the angle which the Minosharp is Made for. However a Japanese Knife would most likely have the same angle as the Minosharp.

        You can change the angle by simply running it through more times.

        However, if you want to upgrade the fibrinox are great budget friendly knives and the factory angle is 15°, the same as the minosharp.

        • I Have been thinking of the Fibrox and with the Current 20% eBay Sale They would be quite a good Cheap knife. But it really just looks so ugly, i know the purpose of a knife is to cut however also looking for a nice gift.

    Not sure about current market or exchange rate.

    I bought my Tanaka Damascus Blue #2 240mm gyuto for AUD128. One of my best purchases (all categories). Almost 10 years and I sharpen it to shaving sharp. Used daily and it cuts paper for 3-4 months. It gets sharpened before it fails the paper test.

    I imagine the price has gone up but I suggest the 210mm if you're not obsessively youtubing and practicing your prep skills.

    Shun is okay if you can't be bothered with studying hand made knives. Hand made can be hit and miss at the ~$150 mark.

    Try metalmasterjp. He has a eShop and eBay. I'm sure he uses Google translate to communicate so it can be tough, but he is legit and cheap.
