We are a young couple and planning to go to Africa for 2 weeks over christmas and new year and wish to do a Safari as well while over there. Does anyone have any recommended itineraries of where to go and stay, etc?

Kenya has many giraffe hotels and safari tours. Have a look.
Pop in to flight centre and pick up an Africa booklet for inspiration. Or buy a lonely planet guide for key items to search online.
Make sure you see the Big 5.
I planned a trip last year. Never went.
I planned to hire a car and drive in Kruger National Park myself; like the locals do.
Highly recommend hiring your own car! Did this and drove through, Kruger, it was an amazing experience. It’s huge, so it’s good we got to go at our own pace
On the other hand, I can't imagine how much I would have missed if I didn't have the driver/guide. Firstly If I'm driving somewhere I don't know, I'd be more concerned about where I was going and wouldn't see as much. Secondly there were so many times where the driver stopped, pointed to a large field and a couple of minutes later a cheetah pops his head up from the grass or spots a lion hiding in a tree before going closer for a better look. We would have driven right past so many of these cases.
FYI went to Tanzania and it was awesome - Killamanjaro, Serengetti and Ngorogoro crater.which tour company did you go with? and was it just a day tour?
@jche6075: sorry i only just saw this. it was Basecamp Tanzania. We went private so they arranged the schedule around what we wanted, and we took around 2 weeks. They do day trips though to the more local parks.

Chobe National Park. Can't be missed. Victoria falls is worth a look too, it'll be a bit drier at that time but you can see clearly the scale. Table Mountain also.
Have a look at teeming River Cruises, they have one in Africa coming up. I am unsure of dates though. they are an American company with reasonable prices.
Highly recommend absolute africa tour company if your up for camping with a group. East africa would probably be your best bet for 2 weeks. Some kind of circle from kenya to tanzania masia mara/Serengeti
