FYI. Both configurations have 8GB of RAM. Item number 332834338494 has 8 GB DDR4 memory, Plus 16GB of Intel Optane memory which is functioning as low latency 'cache' for the lousy mechanical 1TB laptop drive.
Intel optane memory is usually installed in the M.2 NVME slot, so if it's not that useful to you, you can remove it yourself and replace it with a proper larger sized M.2 SSD.

Oh that's utter BS. Optane has its uses, but masquerading as "RAM" is not it.

Intel Optane is like a faster SSD. It's nowhere near RAM performance levels.
JB HiFi love advertising some of their laptops as having "20gb of RAM" where actually it's 4gb plus 16gb optane.
Easy choice - go for the one with the SSD. Having a slow HDD will drive the overall performance very low. If there's a choice to go for a 128GB SSD thats still better.
The one with the SSD. Have the OS installed there then add extra RAM/storage when you feel you need it.
Depends on what you're using it for, but it's easier to add in an SDD than RAM, and SDDs are cheaper than RAM at the moment. I'd go the one with more RAM, and add your own SDD. (just double check that you can - I only had a quick look).
