I have this knife set and it is absolutely amazing!
How long have you had them for and have you had to do your 1st sharpening yet…. if so… how did you sharpen?
I've heard quite a few chefs say they are more involved/meticulous to sharpen which I think is a bit of an aspect of owning Japanese knives in general. Excellent knives, but as I said - more meticulous sharpening required…

My friend has some Global knives and he got a regular sharpening stone as does it himself, don't think there is too much too it but I believe you don't over do it!

Remember, no dishwasher, and don't leave them in the bottom of a damp sink, they will start rusting within 24 hours. I inadvertently found out the latter the hard way!
