Keep them dark, and keep them cool. Also, don't store them near onions, bananas, or other fruit — this will encourage them to sprout faster. If you have a dark, cool closet away from the heat of the kitchen, store them there. Also, it's best to take them out of the plastic bag and put them in a basket or breathable cotton sack. And finally, make sure they are totally dry before storing long-term. Damp potatoes will rot or sprout faster.

OK I do all of this except the plastic bag thing and have found my potatoes start sprouting after 4 days :(

me too kept them in the original plastic packaging. damn they should tell us about it
@dragonindespair: :( I bought 2kg on sat. Chucked the plastic bag away. Put them in a bowl in my wardrobe, which is pretty dark. Opened that door ONE time this entire week. Come Thursday (today) I open the door again to get some potatoes :( some have just started to sprout. It's been like 5 days :_(

Otherwise in a cloth/hessian bag in the cupboard. Like BA said, avoid plastic, light, damp places.

Tricky question are they floury for roasting and chipping or waxy like for salads …..
This is my biggest source of frustration with the way that Australian supermarkets sell potatoes. Often the packages or labels say nothing more than that the potatoes are brushed or washed (which we could have deduced by looking at them). Or they'll use brand names, making it harder to work out whether they're high/low starch and how they compare to other varieties. Sometimes the packages will tell you what they are best used for; other times they won't. Descriptors like "all-rounder" are too vague to be useful.
If possible, it's far better to buy potatoes at a fruit/veg market: not only are the prices often far better, but the person at the stall can usually tell you something about the potatoes.
So uncompetitive for potatoes.

Agreed, usually there are much better deals on washed potatoes to be had.
