Currently looking at buying a Kayak for fishing in estuarys and local waterways on the Gold Coast. Would be going out at least a few times a month.
Are there any brands to give a wide berth and what should I be paying attention to?
The size around 2.8m to 3m seem to be the right size and is what I've been looking in to. Also would like to mount an electric motor to it as some stage - this weekend saw two getting around with one mounted to the side at the rear, and another on the back.
From my research there are heaps out there going second hand, but at this stage I've not got enough knowledge to know if they are a good price or not.

It really depends on your budget. I personally have a Hobie Revolution - and I've found it to be worth every cent. I've only fished out of a conventional (non-pedal driven) kayak a couple of times, and I found it to be painful to say the least.
If your budget can stretch to buying a Hobie, you won't regret it. There's basically two "standard" models to look at - either the Outback or the Revolution. Basically the Outback is wider/more stable and has more room for extras - and the Revolution is quicker and easier to cut through the water. It depends on the areas you're likely to be fishing with them as to which one you go with. I wish I had an Outback for a bit more space, but overall I'm happy with the revo. If you're likely to add an electric motor, I'd be leaning toward the outback…. But I'd check out nearby dealers and try to get out on a demo day and see what works best for you.
Stepping up from these, there's a pro-angler which is more like a single man boat than a kayak. I've got a friend with one which is fitted with a fancy electric motor, and it's a great rig - but pretty costly once it's completely fitted out.
