Chef with no confidence-update

Hi guys.
So a long time back I posted as the chef with no confidence.

Got some great advice. Some.. Well… Anyway.
Just as an update things have improved so much and I thank the good advice I got here.
Since then… The food truck thing never worked out.. But I worked for some great places and did amazingly. A private gentleman's club(the cigar rich library type not the sexy type). Learnt oh so much and got to know myself as a chef and what I really value.
I worked with some celebrity chefs aswell that moving on from all that high class fine dining to work as the head of the kitchen in one of the best cocktail lounges in the city. I employ young at risk chefs now and live on the same St in the cbd giving out leftovers to some of the other homeless/at risk when I can.
Made friends with a few and worry when they disappear even.
I have total control over the menu ordering costing staff etc. and complete confidence from the owner and the best team of people who care that I've ever met. We do amazing ticketed events as well as free adhoc ones plus collaborations. Great critic reviews too! It's more than anything I could have asked for without owning a place myself.

I just want to say thanks for the great advice back when I needed it.

    What would you say was the best piece of advice you got when you were at crossroads?

      That we all feel inadequate at times but you just have to try. Even if you don't do the trial shift just get out of the house go to the restaurant and even if you don't walk in you made an effort now get a treat and maybe you'll go in next time. We're all just performing and sh**ting ourselves at the same time. It's okay to feel like that. It makes it easier to deal with when you know other people are faking it too.. Just better haha

        I actually tell that story to every one of my trials/interviews that confess they're nervous or scared etc. Helps them feel a bit more relaxed

        As you have so amply proven a lack of confidence is often all that holds us back from reaching our potential. Overcome the fear and take the first step and your capability steps in; then it snowballs and each challenge becomes easier. It really helps to be surrounded by good people as well; when you are feeling down you don't need naysayers on your tail. The greatest gift we can give is to help one another. Congratulations - you did it.

    young at risk chefs

    Every person I know that works in hospitality uses drugs. Often to work. Worse than lawyers.

    • Using drugs and "young at risk" aren't necessarily the same thing by a long stretch.
