I was wondering if it's more worth to get a Metabox Alpha-X N850EP then just put in my m2 SSD & HDD into it as an upgrade or is it more worth to find the ASUS ZenBook Pro 15 UX580GE for university studies with a bit of gaming on the side

I can't speak for how they are these days, but I bought a Metabox W350ET laptop back in 2012, and it's still going strong for the most part.
Use it daily, still play a fair few games on it. The only modification was a new SSD.The only issue I have had is half the keyboard started dying on me a couple of years ago (I think around 2016). So now most of the keys on the right side fail to work unless absolutely hammered, but even then they do not always work.
I use a plugged in keyboard most of the time as I don't really travel with it anymore, so it's not an issue for me these days.I’ve had a mid tier meta box the last couple of months. No problems at all and seems to be decent quality. Warranty might be voided if you bust it open though.
A friend bought a Metabox, but he seemed to be returning it under warranty quite frequently.
I think he had issues with the wifi breaking completely. And then the ethernet port died. And then something else went wrong..
Maybe look at the Dell Inspiron 15 Gaming — you can get some cheap deals on those, and they have a better reputation (in my opinion) for reliability.
Metabox since 2008 and love the fact they can be upgraded. And it's easy to clean the fans.
If you just want best bang for buck get a second-hand or refurb if desperate. Second-hand prices can go a long way.
Otherwise eBay brand new on sale is probably your best bet but always cross reference with Amazon and staticice and reddit and a Google search to be sure.
Sometimes eBay U.S. or international works out cheaper even with shipping and import tax on all models and laptop performance ranges. But you will need to replace the power cord and transformer/power adapter/plug.
Classifieds on gumtree and Facebook marketplaces and Facebook buy and sell groups and Facebook second hand pc groups and ozbargain classifieds are my current go tos.
