Looking to buy a bunch of carbon steel pans from a hospitality shop (rather than the usual home suspects)
anyone has any recommendations?

if you don't mind not having a long handle try the paella pans from Victorias Basement

i got one to do roasts in and finish them a benchtop oven on low on the same pan . Love how you can blast the thing as hot as you want
without having to worry about coating. Because they are thin they dont distribute heat evenly. I wish i had a wok burner on my gas stove to heat the middle up too as that is the cooler spot on my burner on high with a single outter ring.

I also bought a carbon steel paella pan from Victorias Basement QVB. I use it on top of my weber charcoal grill.
