La Cooperativa Agraria Cafetalera de la Provincia Fronteriza de San Ignacio is one of the oldest cooperatives in San Ignacio dating back to February 1969, and boasting of 480 associates throughout the four Districts of La Coipa, Tabaconas, Huarango, and San Igancio. Their values include care for the environment, evidenced by continual Organic certification since 2008. CAC Fronteras plays a leading role in the community of Cajamarca, and benefits from controlling their own dry mill in the port-side city of Chiclayo in Northern Perú.

  All well and good, but for most domestic situations the time you get to the 3rd bag, (and for some, the 2nd), they will be past their peak freshness, which ultimately negates the reason for paying a premium to buy fresh beans!
