Are there any portable ones that can do a proper simmer - not 100% on then cycle off?
They exist, but you need to spend $300+. Try searching for "commerical portable induction cooktop". The usual household brands don't seem to make them.

The Xiaomi DCL01CM unit is awesome.
I got mine for $120ish shipped.
My previous Tefal and Kmart jobby are no comparison to the Xiaomi unit, I love it.

Theres some videos on youtube I watched of people using the simmer function which helped me pull the trigger.
Its a relatively new unit and not many people have it in AU I think but I can vouch for it, the build quality is excellent as well.
is this suitable for hot pot?

I haven't tested but like the first preset function is Hotpot so I am assuming so.
A side note, I have to use google translate as the menu is in Mandarin but this is only really a hassle if you want to use the preset functions otherwise its easy to use power mode which goes from 1-99.
and in response to the commercial units, I considered those but many require 15a sockets.
I use my Xiaomi induction cooker on the same outlet as my Delonghi kettle and toaster courtesy of OzB/Amazon :D
If you have a look at the link, it specifically shows a hotpot function.
@pitufon: The Xiaomi also comes with an optional pot for hotpot - check out their product video. Costs extra but looks pretty cool.
I'm deciding between the Xiaomi and the Philps.
Looks good. Have you used it for higher heat cooking? Does it have overheat protection that kicks in while going about what should be normal business?
That is my main issue with my current $50 jobby.

The Anvil commercial one would require a 15amp power socket installed.
I had the old Philips model which was terrible at low heat settings, I now have the Ikea one which is cheaper and also much better at low heat, it still pulses but can hold a simmer without boiling over.
I would steer clear of this - it appears to be a redesign of their previous induction cooker which I had for a day before returning it. It was noisy and the low power settings pulsed on/off just like the ~$50 Kmart/eBay/Ikea versions. The presets were worse than useless. Just get a cheapy and spend the money saved on a few decent pans.
