The bird place near cockington green is pretty good for kids. But you need more than 1 day.
The penis owl in Belconnen is a sight to behold. Check out Charnwood for some local culture, you won’t be disappointed.

not sure if some of these are open in weekends/public holidays
You will definitely need more than one day if you want to see more than one thing properly.
Questacon is perfect if you are bringing kids. It'll tire them out too so they will have a snooze on the ride home.
Lots of good food and craft beer/wine places if you are into that as well.
So literally one day? Or a couple of days?
Can recommend Old Parliament House, Parliament House, the Australian War Memorial (it's incredibly good). Then stuff like Questacon if you have kids, the National Museum, the Portrait Gallery.
