If you have Google contacts and Google photos (set to backup your photos), they should all be in the cloud and you wouldn't bother manually transferring those parts. Just install the apps on the new phone and they're available.
How to check if Google has taken backup of all photos so far meaning it's up to date? Does backup happen in real time?
Should be a little cloud icon in the top right of the main page in the app with a tick in it. Tap on it to see the backup status.

If both your samsung and xiaomi have nfc can transfer it thru easily.
It's MiA1 and no NFC is one of its major weaknesses. :(
Not sure if it's the same for all androids but I could simply insert my SIM card and connect up the two phones - all the data came over in like 5-10 mins.
Didn't get your point - SIM card can be only one. You insert in one of the phones and how do both phones connect to each other? Does it pull photos, contacts, sms, etc?

They connect up via Micro USB/USB C dependant on their ports.
Yeah it pulls over photos, contacts, msgs etc.Or if you use your Google account heavily you'll find most things transfer over anyway.
My process of moving from one android to another android: (painful but reliable).
For your contacts, use google contacts.
Use SMS backup and restore app for sms.
3.If your phones are rootes, you can use Titanium Backu root.
Samsung to Samsung move is now less painful using their builtin phone transfer utility.
what about all the logins and passwords of stuff… i find they all need to be logged in again… which can be a bit of work
If you are logged into your Google account smartlock or whatever should remember them.

Xiaomi mi mover?
It’s quite easy to useI ended up using in built feature to move stuff. It just requires Google sign in. But the painful part is that you need to enter usernames and passwords for all the apps wherever needed. Apps lose all history so for apps like Stocard etc you need to scan all cards/ barcodes again from the previous phone. I don’t think there’s any solution to this.
Also, it is Google specific so can’t move over sms etc. Didn’t bring even web browser history - not sure if it was due to any settings in the previous phone.
For contacts I use an app called InTouch and all contacts remain in the same - no need to put them on phone. Easy when phone is to be changed.
Actually stocard can use your google account to sync your card data.
