There's a place in Launceston where you can see dioramas of moles living quaint lives, the place has a windmill out the front, don't remember the name (Edit: it was Penny Royal, but the moles are gone now :-( https://www.tripadvisor.com.au/ShowTopic-g255344-i1744-k2962…)
Top of Mt Wellington, there may be some early snow you can enjoy, and if not there's still some beautiful views. There are some nice trails and walks that start from the side of it too (you may see signs, you can stop and have a nice walk through the temperate rainforest on your way up)Anti-freeze wardrobe and prepaid return tickets.
Seriously thou, I know folk that have been to Tasmania and NZ, and Tassie is as good if not better than swimming the ditch. Enjoy.

Thank you all so far. How long should one spend in cradle mountain? Was planning a day of hiking but otherwise much else to do?
It depends on your personal preference, some people can hike for days, in there all hiking is long no short return trip apart from Dove lake.
The prefect view of Dove lake will be in the morning before anyone dump in for any water activity, it is a mirror surface of Dove lake,I suggest you sleep for a night and go as early as possible.
Note that if you are driving a camper van you will not have full access(there are time limit for larger vehicle), you better hire a small car which you can go whenever you wanted.
I don't think you've enough time in your itinerary, but perhaps next time you might consider walking or cycling the Tasmanian Trail.
